One of my all time favourite dishes. This mushroom masala works both as a dish within a feast or a meal on its own served on a bed of rice.  This mushroom Masala also tastes good with Roti or chapati. Since the mushrooms are low in calorie  it is an excellent addition to any meal.

Ingredients

  1. Rinse and wipe dry the mushrooms.
  2. Heat oil in a wide pan, add mustard seeds when its splutter add cumin and fennel seeds along with cinnamon stick.
  3. Add green chilies, curry leaves, pandan leaves and sliced onions.
  4. Saute the onion until soft and slightly brown.
  5. Add the sliced mushroom and sliced tomato and stir the mushrooms.
  6. Cook the mushrooms for 2 minutes.
  7. Now add the red chilli powder, coriander, turmeric and salt.
  8. Add Roasted curry powder along with garam masala powder.
  9. Cook for 10-15 minutes or until the mushrooms are soft and cooked well.
  10. Add 1/2 TSP of sugar to enhance the taste of the mushroom masala.
  11. Cook further 5 minutes.
  12. Garnish with coriander leaves and serve.
Recipe Notes

You can use any kind of mushrooms but there are some poisonous mushrooms also available therefore make sure to buy/use good quality or organic mushrooms where possible.

I have used Sri Lankan Roasted curry powder in this recipe, but you can use any standard curry powders instead.
