Just a day ahead for Deepali/ Diwali. It is a big celebration for Hindu’s from all around the world. This is the day we celebrate with lots of sweets and savories.

Kaju Katli is an Indian sweet which is made during this festival day. We can call this cashew nut toffee. The making of this sweet is same as the Milk Toffee. If you haven’t started to make any of the sweets, this is the real life saver which you can make in a jiffy.Β  All you need is ground cashew nut (powdered) and sugar.Β  So let’s start to make this simple sweet.

Instructions
  1. Lightly dry roast the cashew nuts.
  2. Add to the blender.
  3. Grind until smooth powder. Don't blend too much , it will start to ooze oil from the nuts.
  4. Add sugar and water. Cook over a medium heat.
  5. Stir until sugar dissolves completely
  6. Cook until sugar syrup turns thick and sticky. It will take about 4 to 5 minutes to get this stage.
  7. Add cardamom powder.
  8. Lower the heat and add the ground cashew nut powder.
  9. Stir with baloon whisk or spatula.
  10. Mix thoroughly. Add ghee 1 teaspoon at a time.
  11. Stir and cook continuously until mixture thickens and turns into a big mass. Same as milk toffee consistency, This will take approximately 7 to 9 minutes.
  12. Transfer the mixture onto the greased flat tray.
  13. While the mixture is hot roll/ flatten using banana leaf or oil paper. ( I am using cake smoother which very handy when making sweets)
  14. When the mixture is cool enough to handle cut with the sharp knife in a diamond shapes. Store in an air tight container.
